Clover Honey

Our clover/pasture honey is harvested from dairy farms around the Whanganui region.  Mild and sweet to the taste, clover honey is a real old-time favourite. It is available in both its liquid and granulated form.

Honey is a concentrated form of glucose and fructose sugars plus lots of other vitamins and minerals. Being concentrated, it does not stay in its liquid form, but naturally crystallises/granulates. When naturally allowed to crystallise, sometimes those crystals are course, other times the honey has a fine paste texture.  We liquefy and filter the honey then add one part of honey with a fine crystal to 10 parts of liquid honey. This starts off the crystallisation process and along with stirring and the right cool temperatures, allows the honey to granulate with a smooth fine texture.
